Scallop Potato for 2

I FOUND this recipe in an old magazine. Later, I discovered that adding garlic gave these potatoes a unique flavor. My greatest compliment came from a neighbor who's a retired chef - he said this is the most delicious potato dish he'd ever tasted! -Leah Brandenburg, Charleston, West Virginia

Ingredients
- 2 tablespoons all-purpose flour
- 1 1/4 cups milk
- 1 garlic clove, minced
- 1 teaspoon butter
- 1/4 teaspoon salt
- 1/2 cup shredded Cheddar cheese
- 4 thin onion slices
- 2 medium potatoes, peeled and thinly sliced

Step 1
In a saucepan, stir flour and milk until smooth. Add the garlic, butter and salt; bring to a boil. Cook and stir for 2 minutes. Remove from the heat; stir in cheese until melted.
In a greased 1-qt. baking dish, layer onion and potato slices; pour sauce over all. Cover and bake at 350° for 20 minutes; uncover and bake 20 minutes longer or until the potatoes are tender. Yield: 2 servings.

Put Swiss cheese in it!! What a difference it makes!!
My husband loved these. He had two servings....that's how I know. I used skim milk, 2 gloves of garlic, and Colby Jack cheese. Just added this recipe to my recipe box.
This is a very good recipe. I added more cheddar cheese to the flour-milk mixture to increase the cheese flavor. I also use this same flour-milk-cheese mixture over macaronni for a very cheesy macaroni.
Recipes are guides...you change them to suit you...I added two cloves of garlic. I love these potatoes...have made them a few times now. If you think they are "bland" add something to it to make it your own!! Trial and error..:D
The potatoes took double the time to bake and the dish was bland. We were very disappointed.
Loved it! I tripled it for my family and added ham. The sauce is the best we have tasted! We will use this recipe for both plain scalloped potatoes and for scalloped potatoes with ham. Great big YUM!
Made this for my family and they loved it. I used golden Yukon potatoes and increased the measurements to serve 6. In the future I would probably pre cook the potatoes slighty since they required additional cooking time than recipe indicated. Otherwise a definite keeper.
I have made this recipe for at least 25 years. I have added everything from Garlic to Kielbasa. YesYesYes! My husband loves this recipe as well.
Today I will be making this dish in my crock pot for the first time. I'm debating if I should just add the flour & milk (stirred together first) to my crock pot without cooking it first in a saucepan?
