Ingredients

  • 2 servings
  • 1/2 cup orange juice
  • 2 tbsp. Teriyaki Sauce
  • 1 tbsp. soy sauce
  • 1 tsp. grated ginger
  • 1/2 tsp. Tabasco sauce
  • 1 tbsp. honey
  • 3 cloves garlic, crushed
  • 11 ounces Orange roughy fillet
  • Salt and pepper; to taste

Preparation

Step 1

*Combine* first 7 ingredients in a small bowl. *Place* fish in a shallow dish or ziplock bag and pour marinade over fish. *Marinate* for at least one hour. *Place* fish on heavy duty aluminum foil and reserve marinade. *Season* with salt and pepper. *Seal* edges of aluminum foil and place on grill over medium coals. *Grill* for 20 min. turning once or twice. *Alternately*, place marinated fish on a parchment-line baking sheet and *sprinkle* with salt and pepper. *Broil* until done and brown, a scant ten minutes. *Remove* garlic cloves and pour marinade into a small pot and *boil* until thick and syrupy. *Serve* over fish. (n.b. do this in a frying pan or a full-sized pot, not a mini pot - takes forever to thicken that way) I liked a wedge of lemon or lime with mine as well.
14/12/10 - update - I cooked the glaze a little too long and it became very thick and I had to reheat it just before serving. It was still too thick and overwhelmed the fish although Dan loved it again. Watch this carefully,
