Ingredients
- 1 pkg (125 g) Blue cheese
- with cranberries
- 1 cup Mascarpone cheese 250 mL
- 1/2 cup dried cranberries 125 mL
- 1 tsp freshly grated orange rind 5 mL
- 1 cup chopped pecans, toasted 250 mL

Preparation
Step 1
Place Blue and Mascarpone Cheeses, dried cranberries and orange rind in food processor fitted with a metal blade; pulse on and off just until combined. Transfer mixture onto a sheet of plastic wrap and gather to create a log approximately 6-inch (15 cm) long. Sprinkle pecans on a separate piece of plastic wrap. Roll log mixture evenly onto nuts and
re-wrap in plastic wrap. Refrigerate until ready to serve.
