Ingredients

  • 2.5 pounds small red potatoes
  • 2 yellow onions
  • 3 tbsp olive oil
  • 2 tbsp whole-grain mustard
  • Kosher salt
  • 1 teaspoon freshly ground pepper
  • 1/4 cup chopped fresh Flat-leaf parsley

Step 1

Preheat oven to 425 degrees F. Cut the potatoes in halves or quarters, depending on size, and place on a sheet pan. Remove the ends of the onions, peel, and cut in half. Slice cross-wise in 1/4 inch thick slices to make half rounds. Toss onions and potatoes together. Add olive oil, mustard, 2 teaspoons salt and pepper, and toss with potatoes and onions. Bake 50 minutes to 1 hour. Sprinkle with parsley.
