Ingredients
- 2 cups flour
- 1 T baking powder
- 2 tsp sugar
- 1/2 tsp cream of tartar
- 1/4 tsp salt
- 1/2 cup shortening, margarine, or butter
- 2/3 cup milk

Step 1
In bowl, stir together dry ingredients. Cut in shortening until mixture resembles coarse crumbs. Make a well in center and add milk all at once. Using a fork, stir just until moistened.
On a lightly floured surface, pat or roll dough until 1/2 inch thickness. Cut dough with biscuit cutter. Place on ungreased baking sheet and bake in a 450 degree oven for 10-12 minutes or until golden. Serve warm.
*For buttermilk biscuits, prepare as above, except stir 1/4 tsp baking soda into flour mixture and substitute 3/4 cup buttermilk for the milk.
*For drop biscuits, prepare as above, except increase milk to 1 cup. Do not knead, roll, or cut dough. Drop dough from a tablespoon 1 inch apart onto a greased baking sheet.
*For cheese biscuits, add 1/2 cup shredded cheddar to the flour mixture with the milk.
*For sour cream biscuits, reduce milk to 1/4 cup and add 1/2 cup sour cream.
