  • 3 tbsp butter
  • 1/2 cup milk
  • 1 egg
  • 1/2 tsp vanilla
  • 1 cup all-purpose flour
  • 3/4 cup brown sugar, divided
  • 2 tbsp cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup boiling water
  • 1 tbsp icing sugar (optional)

Preparation

Step 1

Preheat oven to 350F. Butter six 6-oz. ramekins and place on a baking sheet. Set aside. Melt chocolate with butter in a heavy-bottomed pot over low heat. Remove from heat and let cool. Whisk milk with egg and vanilla in a small bowl. Set aside.
Combine flour with 1/2 cup brown sugar, cocoa powder, baking powder and salt in a medium bowl. Add egg mixture and stir just until combined. Add melted chocolate mixture and stir until smooth.
Pour batter into ramekins, filling to 1/4 in. from the top. Sprinkle remaining 1/4 cup brown sugar over the batter in each ramekin. Spoon 2 tbsp boiling water over the sugar.
Bake in the centre of the oven until puffed and slightly firm around the edges, about 20 to 25 min. Remove from oven and allow to sit for a few minutes. Dust with icing sugar and chocolate shavings, if you wish, and serve.

Use a box grater to shave a Great Value chocolate bar, $1.28 for 100g.
