Two-Pepper Corn Bread

This moist, pepper studded bread is inspired by the one served at the Metropolis restaurant in Toronto. You can substitute light cream cheese, if desired.

Ingredients
- 1/2 lb cream cheese
- 1 Tbsp sugar
- 2 eggs
- 1 cup cornmeal
- 1 cup flour
- 1 Tbsp baking powder
- 1/2 tsp salt
- 6 green onions, chopped
- 1 can mild green chilies, drained and diced
- 1/2 cup finely chopped sweet red pepper

Step 1
In bowl, beat cheese with sugar; beat in eggs, one at a time, beating well after each addition. Combine cornmeal, flour, baking powder and salt; stir into cheese mixture along with green onions, chilies and red pepper just until combined. Spoon into greased and floured 8 x 4 inch (1.5 L) loaf pan. Bake in 350°F (180°C) oven for 1 hour or until tester inserted into center comes out clean. Let cool in pan for 5 minutes. Let cool completely on rack.
