Ingredients

  • 1 medium onion, chopped
  • 1 clove garlic, crushed
  • 2 tablespoons butter or margarine
  • 1 large tomato, finely chopped
  • 1/2 cup Hatch Green Chile, roasted, peeled, seeded and chopped
  • 1/2 teaspoon oregano
  • 3/4 teaspoon salt
  • 1 pound cheddar or American cheese, grated

Step 1

Saute onion and garlic in butter until soft. Add tomato, green chile and seasonings. Cook over low heat or in the top of a double boiler. Stir in the cheese and cook until it melts. Serve with tortilla chips.

Variations:
- Add 1 1/2 lbs ground beef - browned, and drained.
- Omit the tomato and add 1 can (16 oz) tomatoes with green chile, 5 drops Tabasco sauce, 2 teaspoons flavor enhancer and 2 tablespoons hot butter. At the last minute add 1/2 can (5 oz) evaporated milk or enough so that the mixture is the right consistency. May be served with corn chips or vegetables.
