Ingredients

  • 1 1/2 lb. chicken breasts, cut in strips
  • 1/2 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1 tbsp. vegetable oil
  • 3/4 lb. smoked turkey sausage, cut in 1/4" slices
  • 2 onions, chopped
  • 1 large green pepper, chopped
  • 1 cup celery, chopped
  • 1 minced garlic clove
  • 2 cups rice, uncooked
  • 1/4 to 1/2 tsp. ground cayenne pepper
  • 2 1/2 cups chicken broth
  • 1 cup green onions, sliced
  • 1 tomato, chopped

Step 1

Season chicken with salt and pepper; broun in hot oil in large saucepan or dutch oven over high heat. Add sausage; cook 2 to 3 minutes. Remove chicken and sausage from pan, set aside. Cook onions, green pepper, celery and garlic in same saucepan over medium-high heat until tender crisp; stir in rice, cayenne pepper, broth and reserved chicken and sausage. bring to a boil. Simmer, uncovered for 30 minutes. Stir in green onions and tomato.
