Ingredients
- 1 1/2 cups sour cream
- 1 can of cream of mushroom soup
- 1 onion
- 1 lb. lean ground beef
- 1/2 cup chopped green pepper
- 1 can black beans
- 1 can refried beans
- 1 package taco seasoning
- 2 cups cooked long grain rice
- 4 oz. Monterey Jack Cheese shredded
- 10 count tortillas
- 4 cups grated cheese
- black olives

Preparation
Step 1
1. Cook together chopped onion, green pepper and beef. Drain
2. Mix together 1 and 1/2 cup of sour cream with the cream of mushroom soup.
3. Lay 1/2 sour cream mixture on the bottom of a 9 X 13 pan.
4. In a large bowl mix the beef mixture, black beans, refried beans, taco seasoning, rice, Monterey Jack cheese together.
5. Fill each tortilla with an equal portion of the mixture down the center of the tortilla and fold together.
6. Flatten the tortillas down with a spatula once all have been placed in the pan.
7. Top with the remaining sour cream/soup mixture and 4 cups of the grated cheese.
8. If desired sprinkle with black olives.
9. Bake at 350 for 30 minutes.
10. After baking let set for about 5 minutes.
