Ingredients
- 1 1/2 cups soft coconut macaroon cookie crumbs
- 2 tbsp. butter or maragine,melted
- 2 pkg(8oz.) cream cheese,softened
- 1/2 cup sugar
- 1/2 tsp. vanilla
- 2 eggs
- 1 cup sweetened whipped cream
- 2 tbsp strawberry jelly, melted (optional)

Preparation
Step 1
heat oven to 350
-Mix crumbs and butter;press onto bottom and sides of greased 9-in pie plate
-Beat cream cheese, sugar and vanilla with electic mixer on medium speed unitl well blened
-add eggs;mix until blened
-Pour into crust
-Bake for 40 min or until center is almost set
-Cool
-Refeigerate 3 hours or overnight
-Spread whipped cream over chilled cheesecake
-Drizzle with jelly
