Ingredients
- 1 tsp Olive Oil
- 2 C Chopped Onion
- 1/2 C Red Pepper,
- chopped
- 1 tsp Dry Italian
- Seasoning
- 3 Cloves Garlic,
- chopped
- 2 C Spinach,
- coarsley chopped
- 2/3 C Water
- 1-16 OZ can White Beans
- Cannellini-Great Northern
- Drained
- 1-14 OZ Can Vege Broth
- 1-14 OZ Can Diced NO-Salt
- Tomatoes & Juice
- 1-9 OZ Fresh Cheese
- Tortellini, uncooked
- 1/4 C Parmesan Cheese

Preparation
Step 1
Heat oil in large dutch oven
over medium high heat. Add onion,
red pepper, Italian seasoning and
garlic. Saute 5 minutes or until
tender. Add spinach, water, beans
broth, and tomatoes. Bring to a boil.
Reduce heat, simmer 2 minutes.
Add tortellini and cook until
thoroughly heated. Sprinkle with
Parmesan Cheese.
