Ingredients
- 1/4 cup butter
- 2 medium onions, chopped
- 1 garlic clove, minced
- 3 medium potatoes, diced
- 4 medium carrots, diced
- 5 cups chicken stock
- 1 bay leaf
- 1/4-1/2 tsp thyme
- 1/4 tsp pepper

Preparation
Step 1
Melt butter in large saucepan. Add onion and garlaic. Saute until clear and soft.
Add remaining ingredients using smaller amount of thyme. Bring to a boil. Cover and simmer until vegetables are tender. Discard bay leaf. Add more thyme if desired.
