  • 2 cups mashed potatoes
  • 2 tbsp minced onions
  • 1 egg, slightly beaten
  • 1 tbsp grated parmesan cheese
  • 2 tbsp parsley, minced
  • 3/4 cup breadcrumbs
  • 2 tbsp vegetable oil

Preparation

Step 1

1. Combine potato, onion, egg, cheese and parsley in a medium bowl; blend thoroughly.

2. Shape into 8 patties. At this point, you should refrigerate them.

3. Spread bread crumbs onto waxed paper. Dip croquettes in crumbs, turning to coat evenly; set aside.

4. Heat vegetable oil in a large skillet on moderate heat. Place croquettes in hot oil; cook about 4 mins. Serve hot.
