Ingredients
- 1 1 1 Tbsp. vegetable oil
- 3 3 3 chicken breasts
- 1/2 1/2 1/2 C. onion, diced
- 1 1 1 garlic clove, minced
- 4 4 4 C. chicken broth
- 1 1 1 C. masa harina
- 3 3 3 C. water
- 1 1 1 C. enchilada sauce
- 16 16 16 oz. Velveeta
- 1 1 1 tsp. salt
- 1 1 1 tsp. chili powder
- 1/2 1/2 1/2 tsp. cumin

Preparation
Step 1
Add oil to large pot over medium heat. Add chicken and brown 4-5 minutes on each side. Set chicken aside. Add onions and garlic, cook 2minutes. Add chicken broth. Combine masa harina with 2 cups water in medium bowl and whisk until blended. Add masa mix to pot. Add remaining water, enchilada sauce, cheese and spices. Bring to a boil. Shred chicken into small pieces. Add to pot. Reduce heat and simmer 30-40 minutes until thickened.
