Ingredients

  • 1 1/2 cups sugar
  • 1 cup vegetable oil
  • 3 lg. Eggs
  • 2 cups self rising flour
  • 1 1/2 tsp. Ground cinnamon
  • 1 tsp. Vanilla
  • 1/4 tsp. Ground nutmeg
  • 3 cups shredded zucchini
  • Cream Cheese Frosting
  • 1 pkg. Cream cheese, softened 1/4 cup margarine or butter
  • 2 tsp. Milk
  • 1 tsp. Vanilla
  • 4 cups powdered sugar

Preparation

Step 1

Heat oven to 350. Grease 13x9x2 cake pan.
Mix sugar, oil vanilla and eggs stir in dry ingredients until blended then add zucchini.
Bake 40-45 minutes allow to cool and frost with cream cheese frosting.

Cream Cheese Frosting

Beat cream cheese, margarine, milk and vanilla until smooth.
Gradually beat in powdered sugar until spreadable and frost cake.
