Gorgonzola and Avocado Grill

Ingredients
- 1 large Turkish Loaf
- 2 ripe avocados, slices 1 cm thick
- 300 g gorgonzola dolce, crumbled
- Side salad
- 2 witlof, leaves separated
- 1/2 telegraph cucumber, thinly sliced on angle
- 1 celery stalk, thinly sliced on an angle
- 1 crisp green apple, halved, thinly sliced
- 1/2 c walnuts, toasted, roughly chopped
- 1/2 c flate leaf parsley leaves
- Juice of 1 lemon
- 1 T EVOO

Preparation
Step 1
Preheat the grill to high.
Toast the whole loaf of bread, upside down, for 2 minutes until golden. Remove from grill and top the untoasted side with avocado and gorgonzola. Toast under the grill for 4 minutes until the cheese melts and runs over the avocado.
Meanwhile, for the salad, toss the witlof, cucumber, celery, apple, walnuts and parsley together in a bowl. Season well with salt and pepper, then dress with lemon juice and olive oil.
Cut the Turkish bread into wedges and serve immediately with the salad.
