Ingredients
- 4 cloves of garlic
- 3/4 white onion, roasted, diced
- 1 roasted jalepeno ro serrano chiles, diced. remove seeds for milder taste
- 6 roasted roma tomatoes, diced
- 1/8 c finely chopped cilantro
- juice from 1 lime
- salt to taste

Preparation
Step 1
To roast the garlic, onion, and tomatoes. brush with olive oil an place on baking tray and roast in the oven (or grill) for 25-30 minutes at 350 degrees
Grind the garlic using the mortar and pestle (the molcajete). add chiles, onions, tomatoes, cilantro, salt, and lime juice. Mash until well blended. Add more of anything to taste.
