  • * Pinch fine salt
  • 1 * 1 vanilla bean, seeds scraped out and reserved
  • 1 * 1 large egg
  • 1/2 * 1/2 cup finely chopped pitted dates (about 8)
  • 1 3/4 * 1 3/4 cups plus 3 tablespoons unbleached all-purpose flour plus more for dusting
  • 2 * 2 tablespoons sesame seeds
  • * Special equipment: parchment paper

In a large bowl, stir together butter, sugar, salt, vanilla seeds, egg and dates. Sift in flour and, using clean hands, mix until just combined. Wrap dough in plastic wrap and refrigerate until firm, about 1 hour.

Heat oven to 350º with rack in middle. Line a baking sheet with parchment paper.

Put sesame seeds on a small plate.

On a well-floured surface, roll out dough to 1/4-inch thickness. Using a 1 1/2-inch cutter, cut out about 5 dozen rounds. Roll edges in sesame seeds to coat and transfer to baking sheet, spacing rounds 1/4 inch apart.

Bake, rotating pan once halfway through, until cookies are golden, about 25 minutes. Transfer cookies, still on parchment, to wire rack to cool completely.
