Ingredients

  • 1 lb. dry red beans
  • 1 yellow onion, chopped
  • 1 green bell pepper, chopped
  • 2 ribs celery,chopped
  • 3 cloves garlic, minced
  • 2 cans (14 oz.)chicken broth
  • 2 c. water
  • 1 t. salt
  • 1/2 t. cumin
  • 4 bay leaves
  • 1/2 t. hot sauce
  • 2 full length smoked sausage

Step 1

Cover red beans with twice the volume of water. Bring to a boil for 10 min. then remove from heat. Cover and let stand for 1 hour, then drain.

Combine all ingredients except the rice and sausages into a crock pot. Set crock pot on high for 6 hrs. stirring occasionally. Mash some of the red beans each time you stir.

When the red beans have thickened to a past-like consistency, they are ready.

Slice sausages long ways and fry in a skillet until charred on the inside. Serve beans and sausages over hot cooked white rice.
