Cafe Au Lait- Beignets

An old new orleans tradition is to start the day at the French Market or Morning call with a cup of cafe Au Lait and the Beignets(Creole Doughnuts)
To make Cafe au Lait, pour together into a coffe cup 1/2 cup boiling milk and 1/2 cup hot strong coffee

Ingredients
- 1/2 cup boiling milk
- 2 Tbs. shortening
- 1/4 cup sugar
- 1/2 tsp salt
- 1/2 cup evaporated milk
- 1/2 package dry yeast
- 1/2 cup warm water
- 1 egg, beaten
- 3 3/4 cups flour
- confectioners sugar
- oil for frying

In a large mixing bowl, pour the boiling water over the shortening, stir to dissolve add milk. In a small bowl, dissolve yeast in the warm water and add to milk and egg mixture with egg. Stir two cups of flour into mixture, beating until smooth; add remaining flour and beat about two minutes- dough will be soft. Place in lightly greased bowl, cover with waxed paper and towel. Refrigerate at least 4 hours. Heat oil in electric skillet or heavy pan to 360/ romove dough from refrigerator, divde inhalf, return one portion to refrigerator. On a lightly floured surface, roll out to 9X8" rectangle; cut into about 20 pieces. Gently drop into hot oil. As they rise to surface, turn with slotted utensil. Fry until golden brown on both side, avout 3 minutes. repeat with other half of dough. Drain on paper towel and sprinkle with powdered sugar. Serve warm
