Ingredients

  • Stock
  • 1 turkey carcass stripped of usable meat with bones cracked where you can
  • 1 diced onion
  • 1 diced carrot
  • 1 tbsp salt
  • Water to cover
  • 6 to 8 potatoes peeled and diced
  • 2 to 3 tbsp bacon drippings
  • 2 diced onions
  • diced turkey
  • 2 cups chicken stock
  • 3 tbsp flour

Preparation

Step 1

1. Put the carcass, salt, carrot, onion and water in a stock pot. Cover with water. Bring to a boil and reduce by 1/3 to 1/2 in volume.

2. Drain stock pot, filtering thru a strainer.

3. Melt bacon grease in stock point and saute onions for 5 to 6 minutes.

4. Saute potatoes in bacon grease with flour.

5. Add stock and bring to a boil and then lower to a simmer for 15 to 20 minutes until potatoes are tender.

6. Add chicken stock and diced turkey.

7. Serve (gets better on 2nd day).
