Ingredients
- 1 pound ground beef
- 1 medium onion, chopped (1 1/2 cup)
- 3 cups uncooked mafalda (mini-lasagna noodle) pasta (6 ounces)
- 2 1/4 cups water
- 1/3 teaspoon Italian seasoning
- 1 jar (30 ounces) spaghetti or marinara sauce
- 1 jar (4 1/4 ounces) sliced mushrooms, drained
- 1 medium green bell pepper, chopped (1 cup)
- 1/3 cup shredded mozzarella cheese, if desired

Preparation
Step 1
Cook beef and onion in 12-inch skillet or Dutch oven over medium heat, stirring occasionally, until beef is brown; drain.
Stir in remaining ingredients except cheese. Heat to bailing, stirring occasionally: reduce heat. Simmer uncovered 10 to 12 minutes or until pasta is tender. Sprinkle with cheese.
8 servings.
Skillet Pizza Lasagna: Substitute 2 cans (15 ounces each) pizza sauce for the spaghetti sauce and add cup diced pepperoni.
