Shrimp Scampi

Do you like Red Lobster's Shrimp Scampi? I'll bet you thought it took them an hour to prepare because that's how long they made you wait. Not so. Easy to prepare and then you just pop it into the ol' microwave. That's right, you just nuke it for a couple of minutes and it will delight your pallet. I found this recipe in a magazine while I was traveling somewhere but I don't remember exactly where. I have to classify this as Super easy to prepare.

Ingredients
- 1/2 cup margarine
- 2 tablespoons dried parsley
- 2 tablespoons lemon juice
- 1 large garlic clove, minced
- 1/2 teaspoon sea salt
- 1 pound jumbo shrimp, cleaned
- paprika

Preparation
Step 1
Clean shrimp by loosening shell from the underside and peeling off carefully, leaving tail intact.
1. Make a cut down the back of the shrimp from the broad end to the tail, but do not cut all the way through.
2. With the point of a knife or a wooden skewer, loosen and remove the vein.
Place margarine in 2-quart casserole.
1. Microwave at high until melted, 1½ to 2¼ minutes.
2. Stir in parsley, lemon juice, garlic and salt.
3. Add shrimp; toss to coat.
4. Cover.
Microwave at high until shrimp is pink, opaque and tender (do not overcook or shrimp will become tough), 4 to 7 minutes, stirring twice.
Sprinkle with paprika.
