  • 1 pkg frozen peas
  • 1/4 c water
  • 2 c fresh baby spinach
  • 1 1/2 tsp EVOO
  • 1 garlic clove, minced
  • 1 tbsp EVOO
  • 1 garlic clove, minced
  • 1 c ice water
  • 1 tbsp fresh mint, chopped
  • 1 tbsp fresh lemon juice
  • 1/4 tsp salt
  • 2 tbsp half and half
  • 1/4 tsp fresh ground pepper

Step 1

Reserve 1/2 c peas from the package. Place remaining peas in a bowl with water and microwave for 5 mins. Add 2 c baby spinach; cover and microwave another 2 mins. Drain and rinse well with cold water; drain.

While peas cook, heat a small skillet over medium high heat. Add first EVOO and swirl to coat. Add reserved peas and garlic, sauteing 4 mins. Set aside.

Place spinach mixture, EVOO, garlic, ice water, mint, lemon juice and salt in a blender. Blend until smooth. Add half and half and blend until just combined. Pour 3/4 c soup into each bowl and top with pea/garlic mixture and ground pepper.
