Tomato and Eggplant Gratin

Ingredients
- 1 pound eggplant, sliced
- 1/4 tsp salt
- Cooking spray
- 1/2 cup parmesan cheese
- 2 tsp chopped fresh oregano
- 1/4 tsp black pepper
- 4 cloves garlic, minced
- 6 plum tomatoes, sliced
- 2 medium zucchini, sliced

Preparation
Step 1
Preheat oven to 375 degrees.
Spray eggplant slices with cooking spray, sprinkle with salt and fry on each side till tender and lightly browned.
Combine parmesan, oregano, black pepper and garlic in a bowl.
Layer tomatoes and zucchini in a baking dish with eggplant and cheese mixture.
Bake, covered at 375 for 1 hour.
Uncover and bake for 10 minutes longer (until cheese browns).
