Ingredients

  • 1 tablespoon oil
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 2 (15 ounce) cans black beans, drained
  • 1 (10 ounce) can tomatoes with green chilies
  • 1 (4 ounce) can diced mild chilies
  • 2 tablespoons fresh cilantro chopped
  • Dash red pepper flakes
  • Salt and freshly ground pepper to taste
  • 9 corn tortillas, each cut into 6 sections
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/2 cup cheddar cheese, shredded

Preparation

Step 1

In a saucepan, saute onion and garlic in oil.
Add beans, tomatoes, chilies, cilantro, pepper flakes, and salt and pepper. Simmer 10 minutes.
In a 2-quart buttered casserole, layer 1/3 tortillas, 1/3 beans, and 1/3 cheese.
Continue layering, and end with cheeses.
Cover and bake at 375 for 20 minutes.
Uncover and bake 15 minutes longer until cheese is browned.
