  • 3 eggs
  • 2 C. sugar
  • 3 tsp. vanilla
  • 1 tsp. baking soda
  • 3 C. flour
  • 1/4 tsp. baking powder
  • 1 tsp. salt
  • 3 tsp. cinnamon
  • 2 C. grated zucchini

Step 1

Preheat oven to 325.
Mix together oil, eggs, sugar, vanilla and baking soda.
Add dry ingredients, then add zucchini and mix.
Bake at 325 for 1 hour.
