Shrimp Fettuccine

Christmas Eve tradition at Dad's. For that event we double the sauce ingredients and shrimp, but not the pasta.

Ingredients
- 1 1/2 sticks butter
- 2 pounds shrimp
- Tony Chachere's Creole Seasoning
- 3/4 cup chopped onion
- 2-3 green onions, chopped
- 1 green bell pepper, chopped
- 3 stalks celery, chopped
- 1 teaspoon cornstarch
- 1 teaspoon parsley flakes
- 5 cloves garlic
- 2 tablespoons jalapeno relish
- 8 ounces Velveeta
- 1 cup half & half
- 1 pound fettuccine noodles
- Parmesan cheese

Step 1
Season shrimp with creole seasoning and saute in 1/2 stick butter until done.
In separate pan, saute onion, green onion, bell pepper and celery in 1 stick butter for 15-20 minutes. Mix cornstarch with a little cool water and add to vegetables to thicken. Add parsley flakes and garlic. Mix well. Add jalapeno relish, cheese, half & half. Cook 15 minutes until smooth.
Meanwhile, boil noodles. Add noodles to cooked mixture. Add shrimp. Place in casserole dish and sprinkle with Parmesan cheese. Bake at 350 degrees for 15 minutes (this assumes mixture is starting off hot).
