Ingredients
- 3/4 cup organic honey or grade B maple syrup
- 3/4 cup organic coconut oil (where to buy)
- 2 organic cage free eggs
- 1 cup banana flour (where here to buy banana flour)
- 3/4 cup organic, fair trade cocoa powder (where to buy)

Preparation
Step 1
1. Preheat the oven to 350 degrees
2. In a bowl, combine the honey and coconut oil.
3. In a separate bowl, stir together the banana flour and cocoa powder.
Add the dry ingredients to the honey and coconut oil, and stir to combine.
Add the eggs, one at a time, and beat well.
4. Pour the batter into a 9x13 inch baking pan that's been greased with coconut oil. Bake for 20-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
5. Allow brownies to cool slightly before slicing and serving. Notes
Baking time can vary, so keep an eye on the brownies after 20 minutes and check them with a toothpick before deciding if they're done.

I actually stumbled upon banana flour several months ago. I was intrigued, so I bought a container for me and one for my amazing recipe contributor, Erica. After all, Erica is the queen of gluten free desserts and I knew she’d appreciate trying something new.
Let me tell you: we both LOVE banana flour.
Why Banana Flour?
Banana flour doesn’t taste like bananas. In fact, it’s made from green bananas through a very simple process. The unripe green bananas are gathered, peeled, sliced, dehydrated, and then ground up. That’s my kind of food!
For the many people looking for gluten free alternatives–including gluten free desserts (my favorite part of any meal, right?)–banana flour offers a versatile substitution.
