Passover Blintz Muffins

Ingredients

• 1 lb cottage cheese
• ½ stick melted margarine
• ¾ cup sugar
• ½ cup cake meal
• 4 eggs
• 1 tsp vanilla

Preparation

Step 1

1. mix first 4 ingredients together
2. add eggs and vanilla
3. grease muffin tin well
4. fill muffin tins ¾ full
5. bake 40-50 minutes @ 350°
