Grilled Santa Fe Quesadillas

Ingredients
- 1 can black beans, drained and rinsed
- 3 small tomatoes, diced
- 1 can corn (I use the corn with green and red peppers in it for a little more pizzazz)
- 1 Onion medium size-diced (I prefer Vidalia)
- 1 Tbsp. lemon
- 1 clove garlic, minced
- 1 tsp. Cumin
- 1 pack of Large Tortillas (I prefer flour tortillas)
- 1 bag shredded Mexican style cheese
- Foil

Preparation
Step 1
Mix all ingredients, excluding the cheese and tortillas. Grab 2 tortillas. Layering procedure:
Sprinkle a light layer of cheese over one tortilla
Spread about 1/4 cup of filling on top of the cheese
Sprinkle another light layer of cheese on top of filling
Top with the other tortilla.
Wrap Quesadillas in foil. Grill for about 4-5 minutes on each side, over low heat. Make as many as you'd like! Depending on portion size, each Quesadillas will serve about 1½ - 2 people.

For a meatier version: Lay precooked chicken, crumbled seasoned ground sirloin/turkey, or grilled shrimp over the filling
