Ingredients

  • 1 package yellow cake mix
  • 1 package (3oz) lemon gelatin (jello is best)
  • 4 eggs
  • 2/3 cup water
  • 2/3 cup canola or vegetable oil
  • 1 cup confectioners sugar, sifted
  • 3 tbsp fresh lemon juice
  • 1 tsp lemon zest

Preparation

Step 1

1. Combine the cake mix, gelatin, eggs, water and oil. Beat on low speed for 1 min, then 2 mins on medium speed. Pour into a greased and floured 10" fluted tube pan.

2. Bake at 350F. for 38-42 mins until tester comes out clean. Cool for at least 10 mins before removing from pan and placing on wire cooling rack.

3. Combine the confectioners sugar, lemon juice and zest and drizzle over the warm cake. Cool completely before serving.
