Ingredients
- 3 ½ cups beef broth
- 2 tablespoons butter +
- ½ cup chopped shallots
- 2 cups whipping cream
- 6 tablespoons Cognac or Brandy
- 4 tablespoons drained green peppercorns in brine – coarsely chopped

Step 1
Boil broth in saucepan until reduced to 1½ cups, about 7 minutes. Meanwhile, melt butter in large skillet over medium-high heat. Add chopped shallots and sauté 2 minutes. Remove from heat. Add reduced beef stock, cream, Cognac and green peppercorns. Return to heat and boil until mixture thickens to sauce consistency, about 6 minutes. Season to taste with salt and pepper.
