Ingredients
- 2 lbs. boneless pork
- 2 tablespoons bacon drippings
- 3 cups chopped onions
- 3 cloves garlic, minced
- 3 cups chopped tomatoes
- 1/2 cup chili powder
- 1 tablespoon oregano
- 2 teaspoons cumin
- 1 teaspoon salt
- 1/2 teaspoon hot pepper sauce
- 1 bay leaf
- 14-1/2 ounce can chicken broth

Step 1
Slice pork into 3/4" slices, cut slices into 3/4" cubes. Heat bacon drippings in deep skillet or Dutch oven over medium-high heat. Brown pork. Add onions and garlic, cook and stir until onions are tender, pour off drippings. Stir in remaining ingredients. Low heat and simmer, uncovered, about 1-1/2 hours or until meat is tender and liquid thickened. Stir occasionally.
