GLAZED SALMON (SWEET & SPICY)

Ingredients
- 3 tbsp dark brown sugar
- 1 tbsp soy sauce
- 1 tbsp Dijon hot mustard
- 1 tsp rice vinegar
- 4 6 oz salmon fillet, about 1" thick
- Cooking spray
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper

Step 1
In a saucepan, combine sugar, soy sauce, mustard and rice vinegar. Bring to a boil over high heat, then remove from heat.
Line a jelly-roll pan or cookie sheet that has sides with aluminum foil, spray foil with cooking spray and arrange fish on foil. Sprinkle with salt and pepper.
Bake in oven preheated to 425F for 10 minutes. Remove from oven and preheat broiler. Brush sugar mixture over fish and broil 3 inches from heat for 3 minutes, or until fish flakes when tested with a fork.
Serve with steamed rice and a green salad.
