Preparation
Step 1
For the dressing, make a paste of the garlic, anchovies, mustard, Worcestershire sauce, and egg yolks, either by mashing in a pestle or much easier in a food processor. Gradually drip in the oil, while continuously mixing, then finally add the lemon juice, parmesan, and salt and pepper to taste. (This recipe is enough for a good 8 sandwiches or a big salad one day (add more oil if using on a salad), and a few sandwiches the next.)
Mix a couple of tablespoons of the Caesar dressing with the lettuce and tomatoes. Spread this mixture out on the wrap.
Crumble the croutons into rugged pieces, but don't pulverize them. Spread the broken croutons atop the lettuce and tomato.
Slice the chicken cutlet into strips about 1/3-inch wide and lay these strips across the lettuce and tomato mix.
Wrap the sandwich tightly. Cut in half to serve.
