Ingredients
- Cooked chicken. preferably bbq'd
- 2 tbsp oil
- 1 small onion, diced
- 2 tbsp minced garlic
- 4 jalapenos, finely diced (2 with seeds,2 without)
- 6 cups chicken stock
- 1 (14.5 oz)can fire roasted diced tomatoes
- 1 (14.5 oz) can black beans
- 1 can corn kernels
- 3 chicken breasts, boneless and skinless
- 2 limes, juiced,plus wedges for garnish
- salt and freshly ground pepper
- 1 cup roughly chopped fresh cilantro leaves
- 1 avocado, pitted, sliced
- 1 cup shredded Monterrey cheese
- hot sauce
- Lime tortilla chips to top...

Preparation
Step 1
In a large saucepan , heat the oil. Add onions and cook 2 minutes. Once onion has softened, add garlic and jalapenos and cook one minute.
pour the chicken stock, tomatoes, beans and corn into the pot and bring to a boil.
Add lime juice and fresh cilantro to the pot.
In a serving bowl , add a mound of shredded chicken. Ladle soup over chicken and diced avocados and cheese and Lime tortilla chips crumbled on top...
