Ingredients
- 2 cups thinly sliced yellow onions
- 1 tablespoon olive oil
- 2 eggs
- 3/4 cup low-fat milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- dash of nutmeg
- 1/4 cup grated low-fat cheddar cheese
- 2 tablespoons low-fat Parmesan cheese

Step 1
Preheat the oven to 350 degrees.
Lightly spray ramekins with olive oil spray and place on a baking sheet.
In a large skillet, saute onions in olive oil over medium heat until golden-brown. Meanwhile, whisk together the eggs, milk, salt, pepper, and nutmeg.
Once onions are browned, remove from heat and divide among the ramekins. Sprinkle with the grated cheddar cheese. Pour the egg mixture over the cheese. Bake for 15 minutes.
Sprinkle the Parmesan cheese over and continue to bake for another 15 minutes. Serve warm.
