- Brown & wild rice blend
- quinoa
- spinach
- black beans
- corn
- water chestnuts
- carrots
- topping: mozzarella
- Olive oil
- caramelized onions (not nec)
- chopped tomatoes
- chopped green beans

Step 1
Cook equal amts rice & quinoa as per pkg directions, adding 1 tsp garlic powder to each cup of rice mix
Par cook mushrooms upside down in 350 oven 10 mins to extract liquid
Slice zucchini lengthwise, scoop out flesh to create a "boat", roast upside for a few mins down to par cook
Par cook stuffing ingredients as nec
Mix all stuffing ingredients, adding olive oil to moisten, stuff mushrooms & zucchini, top w chopped mozzarella
Bake at 350 til heated thru & cheese melts
