Ingredients

  • 8 oz. pkg spinach fettucine noodles
  • 1 tbsp. sherry
  • 1/2 c. butter
  • 12 oz. fresh mushrooms, sliced
  • 2 tbsp. flour
  • 1 pt. half & half cream
  • 1/4 c. parm. cheese
  • 1/4 tsp. tarragon
  • 1 lb. cooked shrimp
  • 1/4 c. whopped walnuts for garnish

Preparation

Step 1

1. In large saucepan, cook pasta unocovered in boiling water. 8-10 min. or till tender, stirring occasionally.

2. Immediately drain in large collander, transfer to serving platter, cover with plastic wrap to keep warm.

3. In large skillet, melt butter. Add mushrooms, saute till tender. Sprinkle flour over mushrooms, stir slightly. Immediately add half & half cream, then sherry.

4. Bring mixture to boil, stirring constantly.

5. Reduce heat to medium. Add parm. cheese and tarragon, stirring constantly. Mixture will be thick.

6. Add shrimp. Heat thoroughly.

7. Spoon mixture over spinach noodles. Sprinkle with walnuts for garnish.
