Ingredients

  • One 8-oz package soba noodles
  • 2 Tbs soy sauce
  • 2 Tbs Asian sesame oil
  • 1 Tbs fresh lime juice
  • 2 Tbs rice vinegar
  • 2 Tbs extra-virgin olive oil
  • 1 tsp grated fresh ginger
  • 1/4 cup sesame seeds, toasted
  • 1/4 cup chopped fresh cilantro
  • 4 green onions, sliced
  • 1 cucumber, peeled and diced
  • 6 radishes, thinly sliced
  • Chopped peanuts for garnish (optional)

Preparation

Step 1

1. In a large pot of boiling water, cook the noodles until tender, about 8 minutes; drain.
2. In a medium bowl, whisk the soy sauce, sesame oil. lime juice, rice vinegar, olive oil, and ginger. Add the remaining ingredients and toss to combine. To serve, arrange a portion of each salad side by side on each plate. Sprinkle with chopped peanuts, if you like.
