Raison Criss Cross Pie

Ingredients
- 1 cup packed brown sugar
- 2 Tbsp corn starch
- 2 cups raisins
- 1/2 tsp finely shredded orange peel
- 1/2 cup orange juice
- 1/2 tsp finely shredded lemon peel
- 2 Tbsp lemon juice
- 1/2 cup chopped waln
- Pastry for 2 (see pasty recipe)

Step 1
Make pastry and line bottom pastry pan,
In a sauce pan combine brown sugar and cornstarch. Stir in raisins, orange peel and juice, lemon peel and juice and 1 1/3 cup cold water. Cook and stir over medium heat till thickened and bubbly; cook and stir 1 minute more. Remove from heat; stir in walnuts. Fill a pastry lined pie plate with raisin mixture. Cover with the criss cross pastry. Cover edges with foil.
Bake at 375 for 20 minutes. Remove foil and bake for another 20 minutes or until crust is golden brown.
