Grilled Red CHile Steak Fajitas

Ingredients
- 2.5 lb flank steak
- Salt & Pepper
- 4 T EVOO
- 3 red, yellow and/or orange peppers, seeded & sliced
- 2 onions, sliced thin
- 2 lg cloves garlic, minced
- 1 lg chipotle in adobo sauce, minced
- 2 t chile powder
- Flour tortillas, warmed

Preparation
Step 1
1. Heat broiler.
2. Season beef w/salt & pepper; rub w/1T EVOO. Place on rack in broiler pan.
3. Broil 8-12 min, turning once or until cooked to desired degree of doneness. Let sit 10 min before slicing.
4. In large skillet, heat remaining EVOO over med-high heat.
5. Add peppers & onions to skillet; cook 4-5 min.
6. Add garlic, chipotle in adobo, chile powder & 1/2c H2O. Cont cooking until veggies are softened.
7. Season w/salt to taste. Serve w/warm tortillas.
