Ingredients
- Marinade:
- 1 lb. (21 25) shrimp, peeled and deveined with tails on
- 1/2 cup pineapple juice
- 1/4 cup olive oil
- 1 chipotle pepper, minced
- 1 clove garlic, minced
- 1 tsp. salt
- 1 tsp. ground black pepper
- 1 Tbsp. chopped cilantro
- Sweet & Sour Sauce:
- 1 cup chili sauce
- 1/4 cup pineapple juice
- 2 Tbsp. rice vinegar
- 1 tsp. soy sauce
- 2 Tbsp. brown sugar
- 1/4 tsp. ground ginger

Preparation
Step 1
In a medium-sized bowl, mix all the marinade ingredients together until evenly distributed. Add the shrimp, toss well to coat, and marinate for 15 minutes up to 1 hour.
When ready to grill, drain marinade. Preheat the grill on high and add the shrimp to a mesh grill pan. Cook shrimp for 5 or 6 minutes until cooked through, tossing frequently. Whisk all the sweet and sour dipping sauce ingredients in a small bowl until well incorporated and serve alongside the shrimp.
