  • Crust:
  • 1/2 cup butter
  • 1/4 cup granulated sugar
  • yolk from 1 medium egg
  • 1/8 teaspoon cinnamon
  • 1/4 teaspoon vanilla
  • 1/2 cup flour
  • 1 cup chopped pecans
  • Filling:
  • 2 lbs cream cheese at room temperature
  • 1 1/2 cups granulated sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • 1/2 cup whipping cream

Preparation

Step 1

Crust:
Cream 1/4 cup butter and sugar, add egg yolk, cinnamon, vanilla, and flour and stir well. Pat mixture until 1/4 inch thick onto ungreased, nonstick cookie sheet. Bake 25 minutes at 350 until golden brown. Let cool and crush into crumbs. Mix 1/4 cup of melted butter, crumbs, and nuts. Press into bottom of 9-inch spring-form pan and set aside.

Filling:
With a mixer, cream cheese with sugar until no lumps. Add eggs one at a time. Add vanilla and whipping cream. Pour into pan with foil underneath in a large baking pan. Fill baking pan with 3/4 inch of water. Place on low oven rack in 300 degree oven for 1 hour and 40 minutes. should be solid in the middle when shaken, not soupy. Cool, release from pan and refrigerate.
