TO DIE for thin mint brownies

Ingredients
- 1 brownie mix mix according to package directions
- 15 chopped thin mint cookies
- 1 stick of butter softened
- 2 TB evaporated milk could use milk for substitute
- 2 cups powdered sugar
- 1/2 tsp. peppermint extract
- couple drops green food coloring
- 1 cup semi-sweet chocolate chips
- 1 tsp vanilla
- 1/2 cup chopped andis mints

Preparation
Step 1
Make brownie mix according to package. Fold in thin mints and pour into a greased 9x9 pan. Bake according to package directions. Once your brownies are done let them cool for about an hour. In a medium sized bowl mix 4 TB butter, powdered sugar, evaporated milk, peppermint extract and green food coloring until fluffy. Spread mint frosting over brownies. Refrigerate 1 hour. For chocolate glaze, combine 4 TB butter, chocolate chips and melt for 1 minute in the microwave. Once chocolate chips are melted, stir in vanilla. Pour over green frosting and spread by tipping pan. Sprinkle andis mints on top. Refrigerate for 1 hour before cutting.
I am making this recipe right now and so far, so good. I had to substitute Mint Oreos for Thin Mints so I hope it still turns out great. Just a couple little things I noticed about the recipe: the ingredients list includes evaporated milk, but the directions do not. I used it in the mint layer. Also, the brownies are not ready in I hour 5 minutes since they have to sit for 2 hours between the different layers. The recipe seems great overall and I’m looking forward to trying them! Thanks!

These received so many compliments. I made enough for a 9×13 and had some left over. I froze them individually so I could have a little treat whenever I wanted without feeling like I had to eat the whole pan before they went bad. I must say, they are sooooo much better when you warm them up and the toppings are all melty!!!! Oh, My, Gosh! Next time I make them, I will just cut them right away and freeze. :D
