Ingredients

  • Whole Chicken
  • 1 Bag Red Potatoes
  • 6-8 Shallots
  • 2 Small White Onions
  • Favorite Chicken Rub
  • Salt
  • Pepper
  • Fresh Thyme
  • Paprika
  • Cayenne Pepper
  • Butter
  • Olive Oil
  • Chicken Broth
  • Worcestershire Sauce

Preparation

Step 1

Wash chicken throughly.
Cover with olive oil.
Rub chicken with favorite chicken rub, paprika, cayenne pepper, thyme, salt and pepper.
Place chicken belly up in roasting pan.

Cut red potatoes and shallots in halves.
Cut onions in quarters.
Add to the bottom of roasting pot.
Sprinkle spices on potatoes, shallots and onions.
Add chicken broth to bottom of the pan.

Place chicken on the bottom of the oven.
Cook chicken at 425 degrees for 2 hours. Check chicken every 20 minutes and keep moist.

When chicken is finished allow to cool 5-10 minutes.
