Creamy Camembert Spread

Serve this rich spread with crusty bread or crackers and grapes. It takes only minutes to prepare, although the cheese should marinate in the wine overnight. For the best flavor, use freshly shelled walnuts.

- 4 oz (125 g) Camembert cheese
- 1/3 cup (75 ml) (approx) dry white wine
- 2 tbsp (25 ml) unsalted butter, softened
- 1 tbsp (15 ml) dry white wine
- 1/4 cup (50 ml) chopped walnuts

Scrape rind from cheese or remove carefully with sharp knife. Place cheese in small bowl; cover with 1/4 cup (75 ml) wine (add more wine to cover completely, if necessary). Refrigerate overnight.
Drain cheese in small bowl, beat together cheese, butter and 1 tbsp (15 ml) wine. Stir in walnuts. Pack into small serving dish; cover and refrigerate until 30 minutes before serving time. Makes about 3/4 cup (175 ml).
