Ingredients
- 4 medium potatoes
- 2 eggs, beaten
- 2 tsp. onion flakes
- 1 tbsp. flour
- 1 tsp. salt
- 1 tsp. lemon juice
- 1 tsp. baking powder

Preparation
Step 1
Shred potatoes and set aside.
Beat eggs in bowl until frothy. Add onion, flour, salt, lemon juice and baking powder. Drain juice from potatoes and stir potatoes into egg mixture. Heat oil in frying pan. Drop by small spoonfuls into frying pan. Brown on both sides. Serve warm with sour cream or apple sauce for dipping.
May be made up ahead of time and reheated in 350 degree oven for about 10 minutes until hot.
